What You’ll Need for a Great Picnic for 2

It's almost that time. Sunshine & fun! Trips to the lake, desert and mountains. And picnic time.  Be sure to catch my post @ Kathy's Funny Farm
Picnic Essentials:
Picnic basket, carry all or cooler
Dry ice
Eating and serving utensils
Napkins
Wet wipes
Beverages
Wine key/cork screw
Blanket
A linen dish cloth
Small containers of condiments
Salt and pepper

And most important, a romantic menu! Here's two of my favorite picnic foods.



Nothing beats a BLTA in my book, except a BLTA with Gorgonzola cheese and peach thyme mayo. Oh yeah, upscale, romantic and yummy, wouldn't you say?  Don't be afraid of the peach. It's what makes this sandwich perfect! The bit of sweet with the peppered bacon and the tangy Gorgonzola just puts this BLT on a whole other level. Try it.  You'll never want it any other way.

Gorgonzola BLTA with Peach Thyme Mayo

Ingredients:
4 slices sourdough bread, toasted
Peach Thyme mayo, to taste *see recipe below
10 slices, thick peppered bacon, fried crisp
2 large leafs lettuce
4 medium slices tomato (I love Beefsteak)
1 avocado, sliced

Peach Thyme Mayonnaise
1/2 teaspoon dry thyme
1/2 teaspoon freshly grated garlic
1/2 cup good heavy mayonnaise
1 1/2 tablespoons peach preserves  
Salt and pepper to taste

Directions:
Make mayonnaise first. Mix all mayonnaise ingredients together in a bowl in order. Refrigerate until needed. Remember to keep all mayonnaise based foods cold at all times!

Toast bread, split ingredients between 2 sandwiches and assemble in order listed. Wrap in wax paper and tie with kitchen twine for a very picnicky look : D.

California Girl's Fusion Pea Salad with Jalapenos


When someone first offered me a bite of pea salad, my thoughts were, that there was no way I was ever putting this stuff in my mouth. It didn't look appealing and the ingredient list was even less appetizing.  But after just a small taste, I was amazed and hooked.  I've played with my own take on this recipe and here are the results. I hope you'll try it. If you're not already a fan, you will be.

Ingredients:
32 ounce bag frozen peas, thawed
4 boiled eggs, diced
1/4 cup red onion, finely diced
12 or more pickled jalapeno slices, chopped
1 1/2 cups Velveeta cheese, cubed medium
1/4 cup good mayo
1/4 cup plain yogurt
salt and pepper to taste

Directions:

Gingerly, mix all ingredients together in a bowl and keep refrigerated or cold until eaten.
