Boolicious Autumn Pumpkin Joes
Ingredients:
1 pound ground beef
1 pound ground pork
1 onion, diced small
1 carrot, diced small
1 bell pepper, diced small
3 cloves garlic, minced
1 10 3/4 ounce can tomato soup
1 12 ounce bottle sweet chili sauce
1 15 ounce can pumpkin puree
2 tablespoons brown sugar
2 tablespoon yellow mustard
1/2 teaspoon salt
1/2 teaspoon black pepper
2 packages hamburger buns
American, cheddar, Swiss or pepper Jack cheese slices
Directions:
In a large skillet over medium heat, crumble and brown ground beef and pork. Add onion, carrot, bell pepper and garlic to the skillet and cook with ground meats until tender.
When meat is browned and vegetables are tender, add in soup, chili sauce, and pumpkin. Stir to incorporate into mixture. Add brown sugar, mustard, salt and pepper. Stir well, reduce heat and continue to cook sloppy Joe mix for another 10 minutes.
Serve over your favorite buns. Add cheese slices and toast sandwiches on a baking sheet in the broiler to melt cheese. Watch closely! Serves 10 to 12 or more depending on how much you fill the sandwiches. This recipe serves enough for a small gathering of friendly ghost : )
