Buffalo Style Meatloaf
Ingredients:
1 cup milk
1 cup French bread, cut into ½ inch pieces
1 pound ground beef
1 pound ground pork
1 pound ground turkey
¾ cup onion, finely diced-- plus ¼ cup diced for glaze, below
½ cup green bell pepper, finely diced-- plus ¼ cup diced for glaze, below
½ cup bleu cheese crumbles
2 large eggs
4 garlic cloves, minced-- plus 2 garlic cloves, minced for glaze, below
1 tablespoon paprika
2 tablespoons Greek seasoning
4 tablespoons Worcestershire sauce
1 tablespoon coarse salt
1 tablespoon black pepper
Buffalo Glaze:
¼ cup onion, diced
¼ cup bell pepper, diced
2 garlic cloves, minced
½ cup ketchup
¼ cup brown sugar
1 to 2 tablespoons red hot sauce (your choice)
Directions:
Preheat oven to 350 degrees F.
Mix bread and milk in a mixing bowl. Allow bread to soak up milk, about 3 to 4 minutes. While bread is soaking make glaze.
Heat a sauce pan with 1 tablespoon olive oil. Add onion, pepper and garlic. Cook until transparent and fragrant. Add ketchup, brown sugar and hot sauce. Stir well and cook for another 2 to 3 minutes. Remove from heat and cool.
Add the remaining ingredients to the milk soaked bread and mix with clean or gloved hands. Shape meat into a loaf shape and make a well across the top. Pour glaze over top and place on a baking sheet. Bake meatloaf for about 1 hour. Remove from oven and allow to cool. Cut into slices according to your liking.
