Jalapeño Hush Puppies


This recipe is delicious and goes perfect with fried fish and chips.

Ingredients: 1 egg, beaten

¾ to 1 cup buttermilk *Add additional milk at the end if batter is absolutely too thick. You want a very thick batter, that you can scoop*

½ cup onion, diced

2 jalapeño pepper, finely diced *Optional*

1 cup cornmeal

1 cup flour

1 tsp of salt

1 tablespoon sugar

1 tsp baking powder

Vegetable oil

 

Directions:Add oil to a heavy bottom pot or deep fryer 2/3 of the way full and heat for frying 360 to 370 degrees F.

In a medium mixing bowl, add egg and beat. Add buttermilk, onion and jalapeño to egg. In another bowl, add all dry ingredients and stir to incorporate. Add wet ingredients to dry and stir, but don’t overwork. Using 2 tea or tablespoons, lower a scoop of thick batter with one spoon and use the other to remove it carefully into the hot oil. Fry until golden brown. Work in batches of 4 to 6 at a time. Take care NOT TO DROP in. The hot oil can splash out on you!!!
