Mexicana Tostada Pizza


Makes 2 pizzas

2 Large flour tortillas
Cooking spray
1 can of you favorite chili, warmed in the microwave for 2 to 3 minutes
½ pound lean ground beef

½ package taco seasoning
½ cup pepper Jack cheese, shredded
½ cup mozzarella cheese, shredded
4 green onions, sliced small
2 tablespoons cilantro, chopped finely
1 jar of your favorite salsa

Preheat oven to 400 degrees F.

Lay flour tortillas on baking sheets and spray lightly with cooking oil. Bake tortillas until lightly crisp. You will need to watch them, as each oven differs in cooking time.
 

In the meantime, brown ground beef in a skillet with taco seasoning according to package directions. Drain excess fat off.

When tortillas are crisp, remove from oven. Spread about a 1/3 of the can of chili on tortilla, leaving about ½ inch at the edge. Add  ½ of the browned ground beef on top of the chili. Sprinkle ¼ cup of each cheese, ½ of the green onions and 1 tablespoon cilantro. Bake until cheese is gooey and tortilla is slightly more browned on the edges (about 10 minutes), depending on your oven. Keep an eye on it.  

When pizzas are done, remove from oven and top with salsa.

You can also add avocado, lettuce, jalapenos, sour cream or change your meat to cooked chicken pieces.
