Fried Egg Sandwich with Carmelized Onion
2 tablespoons butter or margarine
1 medium onion, peeled and sliced thin
6 slices bacon
1 nice hand full spinach leaves
2 croissants, split
Heat a skillet on medium high heat and add butter. When butter is melted and hot, add sliced onion, saute and cook down until onions breakdown and become caramelized. While onions are cooking, heat a pan and add bacon slices. Fry to a crisp and drain on paper towels. Using the same skillet with bacon fat, crack eggs and fry, as desired. Assemble sandwich: Open split croissants and add fried egg to each. Spoon over caramelized onion. Add bacon slices and spinach. Close and take a bite. YUM...so good!
