Fried Crab Cakes


6 tablespoons equal parts olive oil and margarine for frying
1 pound lump crab meat, picked through for shells
1/4 cup celery finely diced
 1/4 cup red pepper, finely diced
1/4 cup scallions, minced
1/2 cup mayonnaise
1 egg
1/4 cup flour
1/2 teaspoon baking powder
2 teaspoon Old Bay seasoning
2 teaspoon dijon mustard
1 teaspoon hot sauce


Mix all ingredients in a bowl and divide equally.  Form into medium size patties. Refrigerate patties for at least 30 minutes or longer. Heat oil in a non stick pan and fry patties golden brown for about 5 minutes each side. Drain on paper towels and serve hot with sauce of choice.

Sauce:
1/2 cup mayonnaise
2 tablespoon buttermilk
1 garlic clove, minced
2 teaspoon capers, minced
1 teaspoon dill weed
1/2 teaspoon cayenne

Stir all ingredients together in a bowl and serve chilled over crab cakes.
