California Tuna Salad Sandwich
As the weather is getting warmer, I like to keep the kitchen cooler, so we eat lot and lots of no-cook meals, like sandwiches. This is a delicious sandwich either soft or toasted. I hope you give it a try and Enjoy!
California Tuna Salad Sandwich
makes 4 to 6 sandwiches
Ingredients:
1- 6 ounce can of light chunk tuna in water, drained
1- 6 ounce can of white chunk tuna in water, drained
1/2 teaspoon lemon pepper
3 tablespoons sweet red onion
3 tablespoons good mayonnaise
1 avocado, pitted and diced
4 to 6 slices of Swiss cheese
8 to 12 slices wheat or white bread
4 to 6 leaves romaine lettuce
2 tomatoes, sliced thin
Directions:
In a mixing bowl, add tuna, lemon pepper, red onion and mayonnaise. Mix well to incorporate. Gingerly mix in diced avocado. Refrigerate to chill. Assemble sandwiches and add cheese, lettuce and tomato. This recipe will make 4 very plump sandwiches or 6 average filled sandwiches.
