Beef, Bacon, Black Bean & Corn Fajita Taco
Beef, Bacon, Black Bean & Corn Fajita Taco
Makes about 8 tacos
Ingredients:
6 to 8 slices slab bacon, diced
1 ½ pounds thin beef skirt steak, sliced into fajita size pieces
1 onion, chopped or sliced
1 bell peppers, sliced
1 14 ½ ounce can sweet yellow corn, drained
1 15 ounce can black beans, drained and rinsed
1 package taco seasoning
8 flour tortillas
Directions:
Cook diced bacon bits in a skillet on medium high until crispy and rendered. Remove excess fat from skillet and add in fajita meat. Cook until almost done. Add onion and pepper, cook until al dente. Your meat will be completely done by this time. Stir in corn and beans. Add taco seasoning and mix well.
Warm flour tortillas and add filling to each. Serve piping hot.
Serving suggestions: lettuce, tomato, hot sauce, salsa, guacamole, ranch
